Why stainless is different
Stainless steel resists corrosion because of its passive chromium-oxide layer. Prepare it with the wrong tools, or tools previously used on carbon steel, and you risk embedding iron particles that rust, cross-contaminate the surface, and destroy the very corrosion resistance the material was chosen for.
